The information is stored in the LibreOffice registry in ~/.libreoffice/3/user/registrymodifications.xcu
There is an extension for OpenOffice.org for managing the recent documents list that appears to work well with LibreOffice 3.3.2.
Version 1.1.1 adds a 'Recent documents of the same type...' option to the 'File' menu, and an 'History Manager : List handling...' option under 'Tools->Add-Ons'. You may need to restart LibreOffice to enable these 'Tools->options.
